Here’s a Chef Henry’s Secret that will save time, money and add a lot of flavor to many dishes.
Roasted Garlic and Olive Oil
1. Buy a container of peeled garlic cloves (available at your local mega discount store).
2. Put garlic cloves and a few peeled shallots into a small roasting pan. Cover with extra virgin olive oil.
3. Roast in oven at 325F until soft and golden. About 15-20 minutes.
4. Strain and keep the garlic/shallot infused olive oil. Use it to flavor veggies and salads.
5. Cover the roasted garlic & shallots in fresh olive oil. Cool and save in the refrigerator. It will keep indefinitely.
6. Mash and use roasted garlic cloves in place of raw garlic in your savory cooking & salad dressings.
